Oh avocados. Deliciously smooth and ombre green. By now, I’m sure you have seen dozens of recipes for avocado toast. I love avocado toast because its so easy to make and modifiable to your own liking -here’s my simple and quick take on avocado toast:
1 Slice of whole grain bread
Half an avocado (ripe)
1 Teaspoon of dijon mustard
Pepper (to taste)
1. Cook the egg, sunny side up, on medium heat until edges golden or to your preferred softness.
2. While the egg is cooking, toast the bread and peal and slice the avocado vertically into pieces.
3. Once the bread is toasted, spread the dijon mustard evenly onto the bread. Add pepper.
4. Arrange the avocado slices on the bread and top off with the egg. Sprinkle with more pepper, if desired.
